Behold! The salad I expect to be making weekly for the rest of spring and summer. Oh, I love it so. I think I’ve made it at least once a week for the past month. It is nom-tastic.

To make the salad itself, toss:

  • A few handfuls of mixed salad
  • A few handfuls of spinach
  • Half a large cucumber, sliced and halved
  • About 10 medium strawberries, quartered 
  • One Granny Smith apple, sliced
  • A sprinkling of roasted, unsalted sunflower kernels
  • Or, whatever the heck else you want, since it’s just freaking salad

The dressing pictured beside it is my favorite part. (I get SO tired of oil and vinegar.) To make the dressing, mix:

  • One 6 oz. package of 0% Greek Yogurt (I like Fage)
  • Two packets of True Lemon, or two tablespoons lemon juice and some zest
I tend to keep the dressing separate if I’ve made a big batch like this, and then just toss for individual servings.

The only problem is, I tend to overfill my salad bowl because it’s so good. Therefore, every time I eat this, I end up with at least a few yogurt-covered leaves on my pants.

Yogurt pants are worth it, though.
